    Hi Team,

Just wanted to apologise for the huge time gap between now and my last update! Uni and work has been quite busy but honestly it's really my bad time management which meant I've put off this update. I was initially hesitant to update so regularly because I thought people who get sick of my constant updates.. but I don't want you guys to think I don't care (because I really really do!!) So from now on I will endeavour to update every 10 days!

I don't have a huge amount to say since the last update but I promise by the end of next week, I will have:

    1. Sorted out my flight dates

    2. Finalised my list of organisations I will be contacting in the UK and getting into contact with them in the following week!

(I promise I will not procrastinate planning any longer)

Since my project is about food, I also wanted to share a really awesome recipe I tried out earlier this month. We've recently purchased a small oven which has made me much more inclined to bake! This recipe is a baked oatmeal (great for breakfast!)

    http://deliciouslyella.com/recipe/baked-banana-blueberry-and-raisin-oatmeal-vegan-dairy-free-gluten-free/

There's something about this that makes is so yummy! and just that little bit better than regularly oatmeal-it makes it so creamy and delicious! I didn't follow the recipe to the T so feel free to add/subtract anything you want (a banana and cinnamon plus a few teaspoons of cocoa powder is more than fab)

P.S- the photo is fro deliciously ella! Mine never turns out looking that great

    Talk soon

  • Bloopers and Planning

    Hey Guys!

The last 2 weeks have been pretty insane (as many of you who are in uni would know) with tests and assignments plus my jobs! It all came to a climax yesterday at 6pm when I lost my essay (on the computer) that was due at midnight and I had been working on for the whole day. I was running around everywhere trying to find an IT technician at uni to recover it but everyone had gone home :( Luckily my tutor was nice enough to give me an extension. So at 4pm today, I was officially done with any assignments/test until after the break! (Side note: my essay was on this film called Paradise Now- if you haven't seen it I would definitely recommend checking it out)

Currently I'm working on finalising the organisations which I will be heading to at the end of the year. I'll be contacting them in the next 2 weeks so will keep you posted :) After this I'm looking to do some more research around the whole food ecosystem (both locally and globally) and see how we could tackle the problem from another angle. If you would also passionate about eliminating the barriers to accessing healthy food and want to have a chat, flick me a email at hayl.yu@gmail.com! I'm always looking for an excuse to grab a yummy bite and meet awesome people!

P.S. Here's a link to my video bloopers. I really dislike celery so it was a mission and a half to eat it so many times! Thanks to my more than AMAZING friends Tina and Shannen for letting me borrow the camera and helping me film for the day,

Thank you all so much for your graciously kind words of support and donations over the weekend and beyond. I'm cannot believe that the target was reached in 2 days and to me that is so out of this world! So I really thank each and everyone of you for your generous donations- from $2 to the $200. 2 weeks ago I had no idea that an opportunity like this just around the corner-where I get to pursue what I'm passionate about let alone go to the UK to work with 10 leading social business in this field. I have read every comment on the SMP platform and also on my Facebook page, saw everyone that's clicked attending. So thank you so so much. If you are still wanting to donate/if you know anyone else that is, your most welcome to. All the funds pledged after my target will be going towards funding my pilot once I come home.

I've made a short video to encapsulate what my experience has been for the past few days, so you can check out the YouTube link :)

Looking ahead I am super excited to begin my research in the UK and also right now at home. I'll make sure to keep you all updated and I will not let you down.

    Hayley x
