Hi! My name is Bene, and I would like to start farming salt in Blueskin Bay, just north of Ōtepoti Dunedin. Salt is an essential part of our diet, and if we make it locally we can reduce the food miles/CO₂ emissions associated with transporting salt around the country from the primary salt-producing regions such as Marlborough. My goal would be to sell salt at local farmers markets, bringing our community a tasty and environmentally sustainable salt. Salt can be produced by putting seawater in evaporation ponds, where the water evaporates and salt is left behind. I have made a few small batches of salt so far, and it tastes great! The photo for this campaign is salt from my second batch.
There are quite a few steps in creating a salt farm and being able to sell it! So far I have contacted the relevant rūnaka to seek permission to harvest seawater, and there are no objections to me gathering seawater, which is a promising start. The next steps would be to seek resource consent, and set up an initial farm out in Blueskin Bay, and any contributions to this campaign would go towards those costs.
I grew up in Blueskin Bay and it is such a special place to me, and I would love to share with you a taste of this wonderful area!

Hello! Some good developments have taken place over the last few months, with the evaporation pods being placed out at Blueskin Bay, the first batch of salt being started, and verification occurring. The verification appointment went really well, and the verifier was very happy with the processes we're following. We have also had testing done on the final salt produced, and these have come back with mostly good results including safe levels of heavy metals and faecal coliforms. However, the sodium chloride content of the first batch of salt was too low, so we will not be able to sell this first batch of salt.
This first batch of salt has been a great learning experience and demonstrated that the process I’m following can produce a good amount of salt, and with safe levels of heavy metals and faecal coliforms, and has shown me some things that can be tweaked to improve the process. The second batch of salt will be started in December 2025! Thank you to everyone who has supported this project, we’re well on the way to producing delicious and local salt!
